After moving to the central west three years ago, Mrs Cumberland is taking on the role of chef at the revitalised Exchange Hotel.
The restaurant will open on Thursday June 21 with a selection of cuisine that she believes will tempt and excite the palate.
“I specialise in high quality pub food like our in house crumbed chicken schnitzels and sauces that are made from scratch,” she said.
As well as creating all the desserts in the kitchen, Mrs Cumberland said that the meat was all sourced locally.
“We’re getting our meat from Blayney Hi-Grade Meat and he sources all his beef and lamb from Cowra,” she said.
Manager Marty Russell said the restaurant will be the place to eat in Blayney.
“This will be the kind of place where you would bring your partner for an anniversary dinner,” he said.
