Dr Vijay and Suba from the Blayney Family Medical Centreare the owners of the practice and for now it will be open every Wednesday and Friday, although he has big plans for the future.
"Hopefully we will have this centre open five days a week sometime soon," he said during the opening.
The historic building now contains not only the practice, but also a residence out the back and a new Italian restaurant is due to open on the corner very soon.
Architect and construction manager Evan Lee said that the building was a huge challenge to work with but the end result has been well worth it.
"The work was carried out to a standard that has given a new life to a building that was virtually falling down," he said.

"Two-thirds of the way through the project, when it was discovered that there were serious structural problems associated with the residence, Suba said 'We have got the tiger by the tail now, we can't let it go.'"
Dr Vijay said that it was hoped that the practice, which includes two consulting rooms and a nurses room, would also one day have pathology collection facilities.
Mr Lee said that the residents of Carcoar are very grateful for the contribution that Dr Vijay and Suba have made with their extraordinary investment.
"It's not only the Medical Centre but also the entire redevelopment including the new restaurant and the rebuilt residence," he said.
